Veggie Fritters a great mid week option, and leftover fantastic for school (or mum’s lunchbox . This made 11 fritters. I guess that depends on the size o your family but I love doing a big batches of meals and either storing in fridge for day, or freezer for a night down the track- takes the pressure off when you have super busy days.

Ingredients

2 cups of mixed frozen corn, peas and capsicum

1 onion diced

1 large carrot grated

1 large zucchini grated

8 eggs

1.5 cups of wholemeal self raising flour

Olive oil Pickles or relish to serve

Salad & Cheese to serve

Method: Beat eggs. Mix all ingredients. Fry in a pan with a dash of olive oil. Serve with a salad of your choice and a little grated cheese and either pickles or relish on top.
