Easy midweek eats- try this cheesy goodness – spinach and ricotta lasagna. Super easy – chop massive bunch of English spinach wilt with little water in microwave, drain.

Mix with 500g ricotta, 2 eggs, 3 cloves garlic finely chopped, and 3 large field mushrooms finely chopped.

get ready 2 large cans of diced tomato (because I am a garlic lover I like to use the ones with basil and garlic added) and dried lasagne sheets.

Layer tomato, dried lasagne sheets, spinach mixture, pasta sheets, diced tomato ( now I think if I did again I would add a basic bachamel or white sauce here) then cover with grated cheese. Bake until pasta is soft when poked with a knife.
