A popular breakfast, lunch box, or afternoon tea idea for toddlers, and kids. Mastering home made pancakes or pikelets is fairly easy and oh so worth it! Tastes great and so much healthier then the supermarket pre made ones or the commercial pancake mixes that come in a pouring container, which tend to have added sugars, and other chemical additives, no exactly what you want to be pouring into your kids diet.
1 Cup self-raising Four
¼ teaspoon bi-carb soda
2 heaped tablespoons LSA (ground Linseed, Sunflower and Almond) mix
2 heaped tablespoons Wheat germ
1 dessertspoon melted butter
1 and 1/4 cups milk
Small drizzle of Golden or Maple Syrup (may omit if desired)
& Fresh Seasonal Fruit to serve

Mix together all dry ingredients. In a separate bowl whisk together egg, melted butter and milk. Combine all ingredients, stir well. Heat a greased frypan. With a large spoon place 1-2 spoons of mixture onto frypan. Cook until bubbling and golden brown underneath. Flip and cook other side. Once done you may place pikelet on a tray in a low oven, if you wish to keep warm, until you have finished cooking all of the pikelets. Serve pikelets with fruit and a small drizzle of Golden Syrup or Maple Syrup and sliced seasonal fresh fruit.
