Donny the dog is eyeing of my sister in laws pizza- she is an excellent gluten free cook, having been diagnosed with coeliac diesease for many year now. I asked her to share her recipe- here it is

Ingredients

1.5 cups Gluten free four

3/4 cup warm water

2 teaspoon yeast

2 teaspoons sugar

1/2 teaspoon of xanthum gum

1 tablespoon of olive oil.

So activate yeast in warm water and sugar mixture – for about 5 min in a warm place. Add to the remaining ingredients- she mixes with dough hook of mixer for best results, but you could bring together and kneed by hand. Once mixed let rise for 45min. Roll out and bake until lightly golden. Then add your tomato paste and all your favourite pizza ingredients and pop back in the oven till done.

So those of you with #coeliac or #wheatallergy or wheat intolerance can give it a try. Is there any advantage to going Gluten free if you do not have an allergy or intolerance- you ask?
