A one tray bake in the middle of the week is a perfect solution to time poor working Mums and Dads. I probably end up doing at least one tray bake per week. There are so many flavour variations! Not only easy to prepare, they are super easy to clean up afterward.


1 X chicken maryland per adult / teen or 1 X chicken drumstick for smaller child. I was cooking for 2 adults and 1 X 4 year old. But you can alter amount of veg and increase tray size for a larger family.

2 X capsicums

1 large Sweet potato

1 head broccoli

1 onion

1 zucchini

1 can chickpeas

1/4 cup olive oil

3 gloves chopped garlic, or 4 teaspoons of pre minced and jarred garlic

2 teaspoons paprika

2 teaspoons dried mixed herbs

1.5 teaspoons cumin

1.5 teaspoons turmeric


Pre-heat oven to moderate temp. To save even more time on dishes line bake tray with baking paper. Remove skin from chicken. Roughly chop veggies. Place chicken, chickpeas and veggies on a bake tray. Sprinkle over herbs and spices and olive oil. Give a toss to ensure chicken and veggies coated with flavour. Bake in oven till chicken is cooked through.
