For the baked trout – place herbs and lime juice In cavity and a little on top along with a drizzle of olive oil and a sliced lime. Encase in baking paper and roll edges tight (you are really steaming rather then baking the fish) place in oven and cook until done (flakes easily with a fork).

For the salsa – dice 2-3 peaches, a punnet of Baby tomatoes, a red onion, a bunch of mint and basil leaves, and juice of one lime, and a drizzle of olive oil- mix together.

I also served with a bowl of feta (if you are pregnant you will need to avoid soft cheese but you could replace with some vintage cheddar).

And some yummy whole grain ciabatta bread which I warmed in the oven and then drizzled some olive oil on top. Enjoy the rest of the weekend all.
