On a cold foggy morning there is nothing quite as delightful as preparing steaming porridge for your family! Some people tell me they have horrible memories of flavourless goo porridge perhaps served up as boarding school or the like. So please set aside the goo memory; as well as the artificially flavoured pre-prepared unfulfilling instant versions…. you are about to be blown away by how good a healthy breakfast like porridge can be!
Serves 2 – double mixture for more
Ingredients
2/3 cup rolled oats
1 large apple
6 dried dates
3 teaspoons brown sugar or honey
Cinnamon
1 and 1/3 cup water to cook oats
Extra water to cook apple
Splash full cream milk
Method
Leave skin on apple, core and slice. Cover in water and cook in microwave until apple in tender. Drain water away
Chop dates into small pieces
Cook oats on stovetop with 1 & 1 /3 cups of water, bring to boil, stir regularly until oats are thick and creamy
Whilst oats are cooking add in apple, dates and brown sugar, stir
Pour into 2 serving bowls
Sprinkle cinnamon on top and add a splash of milk
